This is my recipe for Chicken Aloo Tikki (Chicken Potato Cutlets). They are like kebabs and great for starters or to put into sandwiches.
1lb Boneless Chicken
1 tbsp of Basaar (if you don’t have some, Red Chilli will be fine)
1 tbsp Dried Fenugreek
1 tsp Salt
½ tsp Garam Masala
1 tsp Crushed Black Pepper
Handful of Fresh Coriander
1 Onion, cut into small pieces
1 Green Chilli, cut into small pieces
12 oz Breadcrumbs
Boil the potatoes until soft. Then mash with some butter and milk until fluffy. Place into a bowl.
Boil the chicken until cooked, drain and then shred. Place into the bowl.
Add 1 tbsp of Basaar (or Red Chilli), 1 tbsp of Dried Fenugreek, 1 tsp Salt, ½ tsp Garam Masala, 1 tsp Black Pepper and a handful of chopped Fresh Coriander to the bowl.
Peel and cut your onion into small pieces along with your green chilli, also cut into small pieces, and add to the bowl.
Mix everything thoroughly with your hands so it is well combined.
Place in a separate plate or shallow bowl, 12 oz of breadcrumbs.
Place in another separate plate or shallow bow, 2 eggs and beat them with a folk.
Shape the mixture into kebab size patties, coat with the beaten egg and then the breadcrumbs.
Shallow fry until golden brown.
